Fried non-fried chicken

A recipe that looks as though it has been taken from a Fast Food chain but which encompasses the most innovative cooking and processing techniques that the ILVE Star Column allows us to carry out in just a few steps. One of the many secrets of this dish lies in using the highest quality raw materials: in this case, strictly organic chicken. Sous Vide cooking enhances its qualities optimally, making it very tender and tasty.

Remove the skin and debone the chicken (the bones and skin can be used for a good broth); mix the meat with the mustard, honey, Worcestershire sauce and a pinch of salt in a bowl. Put everything into two vacuum cooking bags and seal. 

Vacuum cooking

Set the roner to 68°C and cook for 2½ hours for the meat to be juicy and to then proceed with the oven cooking and avoid stringy meat. 

Oven cooking

Once the vacuum cooking is completed, remove the chicken from the bags, drain and bread it with the Panko mixed with the sweet paprika, a little salt and chopped sage leaves. 

Panko is very light breading, typical in Japanese cuisine, used to prepare fried food, which it gives a particular lightness and crunchiness to. You can buy it ready-made or you can prepare it at home by carefully toasting some bread in the oven and then crumbling it by hand. 

Place the meat on the baking tray lined with parchment paper and spray the sunflower oil on both sides. Bake at 220°C in grill mode and cook for 5 minutes on each side until golden brown. 

Light frying

Place the bags with the chicken in the vacuum drawer one at a time and select the Chef function. Thanks to the alternate pressure, this specific function will allow us to obtain a perfect marinade in just a few minutes. 

After marinating, preheat the Ultracombi in Steaming mode at 68°C. Place the bags on the perforated basket provided and steam for 2 hours and 30 minutes. 

Complete the cooking cycle by switching to the Fan plus Grill mode at 220°C.
